Ingredients

Simplicity Chocolate Cake

  • 165 grams SR flour
  • 220 grams caster sugar
  • 20 grams cocoa
  • pinch salt
  • 80 grams margarine (or really soft butter)
  • 2 eggs
  • 1 tsp vanilla bean paste/extract
  • 130 grams Milk

Recipe's preparation

  1. Preheat oven to 180 degrees and grease and line a ring cake tin.

    In a clean dry bowl, insert butterfly and add flour, sugar, salt and cocoa. Place lid on and sift for 10 sec/speed 2.

    Add all remaining ingredients. To save getting a heap of ingredients on the underneath of your lid, follow this mixing guide:

    10 secs/speed 1, then increase to
    10 secs/speed 2, then increase to
    40 secs/speed 4.

    Scrape down sides and final mix for 10 secs/Counter-clockwise operation"Counter-clockwise operation" /speed 4

    Pour into prepared tin (I prefer ring tin, it cooks quicker without it drying out on the outside by the time it cooks through) and cook for 30-40 minutes or until it springs back when poked or a skewer comes out clean.


    Let it cool on a rack and ice with choccie icing and sprinkle with coconut.

Tip

I grew up in a cholesterol conscious family of the 70's so mum always had margarine. This cake is lovely and light and I am yet to try it with butter, eventhough I bake with butter now, I know I get a perfect result everytime with marg...but you do you x

    Thank you for this! Came across by accident and I had all ingredients except I milled some raw sugar instead of caster, and I used butter ☺️. Whipped it up in no time, light n fluffy cake, I didn't ice as my son hates icing, perfect for school lunch! Cooked in a ringpan, 175 degrees fan forced for 30 mins 👌

    If you need to whip up a cake in a hurry this is ideal. So quick and easy to make, super moist and really light. I iced it with a chocolate icing. Great for afternoon tea with a cuppa.
