Snickerdoodles
- 300 grams plain flour
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 225 grams Butter, softened
- 250 grams white sugar
- 2 eggs, large
Cinnamon Sugar
- 100 grams sugar
- 1 1/2 teaspoons cinnamon

- Preheat oven to 180 degrees C.
- Add flour, baking powder and salt to mixing bowl to sift on speed 3 for 30 seconds. Set aside.
- Cream butter and sugar on Speed 4 for 2-3 mins until pale yellow, scraping down as required.
- Mix in eggs one at a time through the top on Speed 3, until well combined, scraping down bowl as required
- Add flour mix through the top, half a cup at a time until the dough comes together.
- For best results, refrigerate dough for at least half an hour to firm up. This will make it easier to roll the dough balls.
- Shape dough into tablespoon sized balls and roll in cinnamon sugar. [Balls can be frozen before being rolled in cinnamon sugar and then added to cinnamon sugar before baking]
- Space balls apart on try to allow for spreading.
- Bake for 9-10 mins until lightly browned on edges. (Oven temps may vary so cooking time may be more or less, so please keep an eye on them)
- In a small bowl combine sugar and cinnnamon.

The first time i made these, it was a warm day and I didnt refrigerate the dough. They tasted nice, but didnt look that great, as they spread too much.
I have reduced the amount of sugar here as they were incredibly sweet.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
