  • 1 tsp bicarb soda
  • 1 tsp mixed spice
  • 2 eggs
  • 160 grams plain flour
  • 160 grams Self Raising Flour

Recipe's preparation

  1. Prepare a 25cm sqauare cake tin and pre-heat oven 140 (fan-forced)

    Place Sugar, Pineapple, Mixed dried fruit and butter in Closed lid"Closed lid" and cook for 8 mins, 90Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" Place the TM bowl in the fridge for about 30 mins to cool.

    Add Bicarb soda and mix 15 seconds Counter-clockwise operation"Counter-clockwise operation" Speed 3.

    Add Eggs and mix 20 seconds Counter-clockwise operation"Counter-clockwise operation" Speed 3.

    Add in flours and mixed spice and mix through the flour with the spatula then 1 minCounter-clockwise operation"Counter-clockwise operation" Speed 3.

    Spoon into prepared cake tin and cook for around 45 mins - 1 hour or until a skewer comes out clean.

    Lovely cake, because hubby is diabetic didn’t add any sugar, only sweetness from crushed pineapple in natural juice & dried fruit. A big hit, will definitely be making regularly 😋

    Pineapple Fruitcake is awesome !!!

    Fantastic taste, and is long lasting and moist.

    My favourite go to fruitcake.

    Family favourite. Made this cake many, many times in both the old and the new thermie. Never had a failure. Easy, foolproof recipe that tastes great. Store it in an airtight container in the fridge as Qld weather gets a bit hot.

    Best. Cake. Ever. So easy to make, so delicous and everyone loved this over Christmas. I reduced the sugar by one third and it was still amazing. Keeps well for several days. Most recommended.
