- 200 grams good quality dark chocolate, I used green & blacks organic 70%
- 20 grams Butter
- 3 Eggs, separated
- 250 grams thickened cream

Add dark chocolate and butter to TM Bowl and heat 4-6 mins/50 degrees/speed 2 or until just melted. Add egg yolks and mix 15 seconds/speed 4 then transfer to a large mixing bowl. Clean and dry TM Bowl.
Insert butterfly whisk and place egg whites into TM Bowl, whip 2-3 mins/speed 3.5 until stiff peaks form. Add egg white to chocolate mixture and carefully and gently fold through with your TM spatula.
Add cream to TM Bowl and whip for approx 2 mins/speed 3.5 or until thick. Mix cream through chocolate and eggwhites until smooth then pour into desired ramekins or cups.
Place in the fridge until ready to serve, topped with your choice of fruit/nuts/coconut etc.

This is really nice and rich so I have made it serve 6, however you could do 4 larger portions. I served mine with berries and cherries and wafer sticks and it was a real hit! Everyone loves this Mousse, I have requests for it all the time! I have also used the Green and Blacks dark chocolate with ginger and it was devine..... A great one to share with your loved one on valentines day. xo

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

The chocolate mix was too hard and my cream split.
This recipe is very similar to a recipe I have been making on the stove for 30 years, only I add a tablespoon of Cointreau, of which I did for this recipe. I also had to re whip cream as I did not clean the Thermomix bowl after whipping the eggs. The cream went funny. Next time, I would whip the cream first and set aside, as the chocolate mixture does harden. (I followed the whipped cream method in the Basic cookbook the second time) I was able to mix the cream and egg whites through though without any issue. When I was mixing it, it did look as though it was going to have chocolate gritty bits in it, however it was smooth when eating. It is delicious. Dark chocolate a must. Thanks for the recipe.
Great recipe but wasted a tub of cream as it turned to butter in 2 mins...another trip to the supermarket and it came out a bit better but by then the chocolate and egg yolk mixture had hardened a bit.. still tastes good! But watch out for those problems.....
Looks like a great recipe but didn't work for me, the mix became hard before I could stir the other ingredients in and cream became butter after only a minute. Would suggest using runny/whipping cream. Have had better success with the Everyday Cookbook mousse.
Yum .I only had 1 problem that the chocolate mix started to set while you make the rest. So i have tiny bits of chocolate mix throught the mousse now. This is right?.

Yum, this is a beautiful mouse! The only hiccup I had was that I put the cream on for 2 mins and it turned to butter, and being fairly new to thermomix cooking I wasn't sure what to adjust it down to, so I ended up beating the cream with hand beater. Thanks for the recipe!
