Ingredients
Gluten Free Muesli
- 200 g Cashews
- 150 g whole almonds
- 30 g coconut oil
- 30-50 g Coconut Syrup
- 10 g ground cinnamon
- 1 vanilla bean, seeds
- 25 g puffed millet
- 25 g puffed buckwheat
- 60 g pepitas
- 75 g Quinoa flakes
- 90 g flaked almonds
- 140 g dates
- 50 g Goji Berries
- 70 g coconut flakes

1. Preheat oven to 180 C and line 2 baking trays
2. Place cashews and whole almonds in Thermomix bowl. Chop 2 – 3 seconds / speed 5
3. Add coconut oil, coconut syrup, cinnamon and vanilla bean seeds. Mix for 1 minute / 50 C / speed 2
4. Add puffed millet, puffed buckwheat, pepitas, quinoa flakes and flaked almonds. Mix for 2 minutes / 50 C / speed 2
5. Evenly spread nut mixture onto 2 baking trays. Toast for 10 - 15 minutes. (Mixing half way through)
6. Whilst mixture is toasting, add dates and goji berries to Thermomix. Chop 2 – 4 seconds / speed 7
7. After the mixture has toasted for 10- 15 minutes, add the dates, goji berries and coconut flakes to nut mixture, toss and toast for another 3 - 5 minutes
8. Allow to cool on tray before storing in a container
Tip
Adjust coconut syrup depending on sweetness required. You could substitute coconut syrup for honey or any other liquid sweetener
