Ingredients

RAJMA MASALA POWDER

  • 100 grams cumin seeds
  • 120 grams coriander seeds
  • 10 grams carom seeds, ajwain
  • 15 grams dried Indian bay leaves
  • 5 grams cloves
  • 10 grams green cardamom pods
  • 15 grams black cardamom pods
  • 1 1/2 cinnamon quill
  • 5 grams Black Peppercorn
  • 60 grams Kashmiri chilli powder
  • 35 grams ginger powder
  • 1 Nutmeg, broken
  • 15 grams mace
  • 70 grams dry pomegranate seeds, optional
  • 50 grams Dry mango powder, amchur
  • 15 grams ground turmeric

Recipe's preparation

    Masala
  1. Place coriander seeds into mixing bowl and dry roast 3min / 120degC / speed1 – keep aside.
  2. Dry roast cumin seeds and carom seeds in the mixing bowl, (until fragrant) 2 -3 min / 120degC /speed1 – keep aside.
  3. Next, dry roast bay leaves, black cardamom, green cardamom, cloves, mace, pomegranate seeds in the mixing bowl
    3min / 120degC / speed1.
  4. Transfer the dry roasted spices back into the mixing bowl, along with chilli powder, ginger powder, mango powder and turmeric.
  5. Allow all the spices to cool slightly, 2-3mins. Insert measuring cup and mill 1 min/speed 10.
    Repeat process until you achieve a powdery consistency.
  6. Store in an airtight jar and use as required.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
