Ingredients

Stock Powder

  • 1 whole clove
  • 10 Corriander Seeds, or to taste
  • 5 cloves garlic
  • 1 leek
  • 1 carrot
  • 1 onion
  • 100 g Celery, leaves and stalks
  • 1 bunches Fresh herbs, parsley, thyme, oregano, rosemary (whatever is available - to your taste)
  • 120 g salt
  • 400 g Beef or Chicken

Recipe's preparation

  1. Add clove and coriander seeds to Closed lid"Closed lid" and with MC on process 10 sec / speed 10.

  2. Add veggies and herbs to Closed lid"Closed lid" and with MC on process 10 sec / speed 8, scape down sides and repeat as necessary.

  3. Add salt and meat to Closed lid"Closed lid" and with MC on process 10 sec / speed 8, scape down sides and repeat as necessary.

  4. Cook with MC off (use steamer to stop splatter) 30 - 40 min / Varoma / speed 2.

  5. Spread mixture evenly on an oven tray lined with baking paper for 40 - 45 min or until all moisture has been removed.

  6. Allow to cool, then add to Closed lid"Closed lid" and with MC on process for 30 sec / speed 10.

  7. Store in air tight container.

  8. TO USE: 1TSP STOCK POWDER PER CUP OF WATER

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     BJBeckman-79: Another TM recipe from Thermobites says "spread evenly on oven tray & bake 40-45mins 150 degrees till all moisture is removed. That recipe also says "Use 1 tsp of stock powder per cup of water".
    Hope this helps.
