Recipe's preparation

  1. Notes:

    This bread is best made with time to rest/proof in a large bowl after its mixed.

    Make it 6hrs before and refridgerate BUT BEST if left overnight in fridge.

    Method:

    Add all the ingredients into the TMX and MIX 2mins / 37 degrees / Speed 2.

    Bread should be very wet and sticky. It will pour out of the TMX so have a large bowl ready with cling wrap to store in fridge.

    As mentioned leave for at least 6hrs (preferably overnight in fridge)

    Ready to bake :

    Take mix out of fridge, leave for 30mins to bring to room temp.

    In the meantime, pre heat oven 220 degrees and prepare to preheat the pot/dutch oven.

    Heat a dutch oven/cast iron pot with lid in oven at least 10-15min so its nice and hot.

    Then remove the pot from oven, and pour in your dough mix, sprinkle some flour on top and bake now for 30mins lid on.

    Use a sharp blade or knife to cut some slits in top if you like before it goes into the oven.

    Then after the 30mins, remove the lid from the pot and bake for additional 10-15mins lid off.

    Remove from the oven when the look is golden and crunchy.

    Tap the base and it should sound hollow.

    Leave to cool on a cooling rack out of the pot.

    Slice after about 15mins is best.

Tip

Use a goog quality cast iron pot with lid. If baked on a tray it will be flat . Pots give it a better result.
