Ingredients
- 110 grams basmati rice
- 110 grams brown rice
- 80 grams millet
- 40 grams Chickpeas (Dry)
- 140 grams tapioca flour
- 30 grams pumpkin kernels
- 10 grams sunflower seeds
- 2 level teaspoons cinnamon
- 100 grams sultanas
- 10 pieces dried apricots, chopped
- 2 level teaspoons xanthan gum
- 2 level tablespoons raw sugar
- 400 grams water
- 1 level teaspoon Baking Powder, see EDC
- 1 level teaspoon Vitamin C Powder
- 1 level teaspoon sea salt
- 30 grams olive oil
- 1 level teaspoon apple cider vinegar
- 2 eggs

Place basmati rice, brown rice, millet and chickpeas into bowl and mill 1 minute/speed 9.
Add tapioca flour, pumpkin seeds, sunflower seeds, xanthan gum and sugar and mix 5 seconds/speed 4. Set aside.
Put water in bowl and heat 1 minute/37 degrees/speed 1.
Add baking powder and vitamin c and heat 1 minute/37 degrees/speed 1.
Add the rest of the ingredients including the flour and mix 15 seconds/speed 5. Scrape down sides of bowl and mix again 5 seconds/speed 5.
Turn oven on at 180 degrees.
Put into a loaf tin and let it sit for an hour. You can skip this if you want as it didn't rise much until it went into the oven.
Bake for 45-55 minutes.
Cool for about 15 minutes in the tin and then let cool on a wire rack. It is yummy warm or toasted.

Mine didn't rise much letting it sit for an hour so you could skip this if you wanted. It did rise when it went into the oven.
