Ingredients
Dough
- 280 g Guiness beer, flat (without gas)
- 40 + 20 g Butter
- 1 teaspoon cinnamon
- 0.5 teaspoon salt
- 65 g honey
- 510 g baking flour
- 2 teaspoons dried instant yeast
- toasted sesame seed (or seeds of your choice), (Optional)

Open the beer and let the gaz going out for couple of hours (minimum 3 or 4 hour OUT OF THE FRIDGE).
Melted 40 g of Butter, 2min/50°/Speed 2.
Add Beer, 20 g of Butter, Cinnamon and honey into the mixing bowl and mix 10s/Speed 4.
Add Flour and Instant Dry Yeast mix 10s/Speed4 then knead 2 min//.
Transfer dough into Thermomat or lightly floured bench top and work into a ball. If you are using a Thermomat and the dought is a bit sticky, you can sparkle it with a tiny bit of flour.
Allow to approve in a warm place for 30-45 minutes, or until doubled size.
In a cold oven, bake it at 180°C (thermostat 6) for 30 minutes, or until golden brown. Once baked, bread should sound hollow when tapped on the underside of the loaf.

Tip
#1 To reduce the time to wait for getting the gas out of the beer you can whipped it with a spoon.
For me I just open it before going to bed, it's stay overnight and I do my bread on the morning. The most important is to make sure your beer is not cold, so let it outside the fridge!!
#2 I like to sprinkle this bread with some toasted sesame seed but any graines on it can give it a little plus, crunchy and tasty!
