Jumbo Fruit Loaf & Rolls - Thermomumma
- 275 grams water
- 5 teaspoons instant dried yeast
- 550 grams white bakers flour
- 1 teaspoon salt
- 2 teaspoons milk powder
- 2 teaspoons bread improver
- 65 grams sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg
- 45 grams Butter
- 250 grams sultanas or mixed fruit

- Add water, yeast, flour, salt, milk powder, bread improver, sugar, cinnamon, nutmeg & butter to bowl. Knead 8 minutes dough function.
- Tip out dough onto an oiled surface & flatten out. Now add your sultanas & knead by hand until well combined. It will take you a few minutes to fully incorporate the fruit. Don't be tempted to knead them in your Thermomix as it can shred the fruit.
- Wrap in a thermomat or cover with a tea-towel & allow the dough to sit for 15 minutes before using.
- Cut off 2 x 80g pieces of dough - roll & place on a tray for fruit buns. Now shape & place the remaining dough into your jumbo 900g bread tin.
- Place your tray & tin in a nice warm moist area to prove. If proving in a dry heat - spray your dough with water & cover or the dough will dry out. This process may take an hour or so - please only move onto the next step once they have doubled/tripled in size - this is very important.
- Once grown to the desired size place in a preheated oven on 180° fan forced for 25/30 mins for the loaf, and 15/20 mins for the rolls, or until golden brown. Take out of tin immediately & place on cooling rack.

Tip
Tips: If Using A Bread Tin Lid...
Place your lid on just before it reaches the top of the tin.
Make sure to leave some space as the dough will expand slightly from the initial warmth of the oven before it actually starts cooking.
Slide your handle on first, otherwise if you do it from the other end you will rip the top off your loaf off when trying to remove the lid.
5/10 minutes prior to the loaf being cooked take off the lid to allow some colour on the loaf. If you're after more colour once this time is up, you can take out of your tin & place back in the oven for a little while longer.

Nice consistency but would probably glaze the top and add more spices (clove/mixed spice) and maybe some seeds and or nuts next time to add more flavour.
How would I go about letting this prove overnight and then baking it fresh in the morning? New at bread making.

Really soft and light fruit loaf. I subbed the nutmeg for mixed spice and only used 1.5 teaspoons. It's my new favourite!

Thats delicious! First one I’ve made in my new thermomix. Very happy with result. I’ll be adding chopped apricots next time & some ground spices!
We add 1/2 a mc each of flaxseeds, pepitas, chia, oats, and sunflower seeds with the sultanas and make 24 mini rolls for school lunchboxes. They freeze and the kids love them😊

I have the Thermomix bread tin, is this going to work with this recipe? Brother bear wants fruit loaf and this looks delish.
