Ingredients
- 1500 grams water, hot
- 1-2 teaspoons thermomix vege stock concentrate
- a few cloves or bay leaves
- 1 tablespoon honey
- 1 tablespoon vinegar, (apple cider or balsamic)
- 1000-1500 grams corned beef silverside, washed
- mixed vege of your choice
- 1 handful of parsley, (sauce)
- 50 grams Butter, (sauce)
- 40 grams plain flour, (sauce)
- 350 grams leftover strained cooking liquid, (sauce)
- 100 grams cream, (sauce)
- 1 tablespoon mustard, dijon or wholegrain, (sauce)

I'm cooking this todayRecipe's preparation
- Add parsley to bowl & chop 3 seconds, speed 7. Scrape down & repeat. Set aside in a bowl.
- Place water, vege stock, cloves/bay leaves, honey & vinegar in bowl. Insert Varoma & place cornmeat inside. Cook 90 minutes, Varoma, speed 2.5.
- Add potatoes to your simmering basket & insert into the bowl. Cook 15 minutes, Varoma, speed 2.5.
- Add mixed vegetables around cornmeat & cook for another 15 minutes, Varoma, speed 2.5 (or until cooked to your liking).
- Set Varoma & Simmering Basket aside. Strain your cooking liquid & set aside.
- Add butter & flour to your bowl. Cook 5 minutes, 100°, speed 2.
- Add 350g reserved cooking liquid, cream, mustard & parsley to bowl. Cook 8 minutes, 100°, speed 4.

Tip
This recipe makes 2 cups of sauce, the leftovers freeze well. You can use it as a base for a pasta bake, on leftover veggies, you name it!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Love this recipe, I've gone from Corned Meat hater to lover!
Silverside was so nice and soft. Even my fussy one liked it.
Yum! I loved the recipe. The meat was very juicy and the sauce was so yummy. Just be prepared because I had a lot of sauce leftover.
Turned out absolutely perfect. The meat was so tender...it melted in the mouth. I changed the cream to coconut cream for my dairy intolerant household and it was fabulous. I had been too scared to do it in the thermy before this but this is the only way i will cook it from now on. Cant wait to try it with pickled pork.
