Ingredients
Dough
- 300g water
- 2tsp dried yeast
- 1tsp raw sugar
- 20 g oil
- 1/2 tsp salt
- 420g plain flour
- 50g semolina
- extra flour for rolling
- milk for brushing
- sesame seeds for sprinkling
Filling
- 1 large white onion
- 200g bacon
- 100g tasty cheese

Place water in Tm bowl with yeast and sugar.
Heat 2 mins / 37 Degrees/ Speed 1
Add oil flour, semolina and salt.
Process 6 seconds / Speed 5
Knead "Dough mode" 2 mins 30 seconds.
Remove and set aside in a bowl or ThermoMat in a warm place to double in size. The dough will be sticky so dust lighly with extra flour.
Meanwhile prepare filling.
Place cubed cheese in TM bowl and grate 6 seconds/ Speed 7.
Set aside
Place bacon in TM bowl and chop 6 seconds / Speed 6
Set aside to cool in fridge.
Place halved onion in TM bowl and chop 3 seconds /Speed 5.
Scrape down sides of TM bowl and add oil.
Saute 2 minutes"Gentle stir setting" /120 degees
Return Bacon to TM bowl with onion and saute another 2 mintues/120 Degrees"Gentle stir setting"
Add cheese and mix "Counter-clockwise operation" 3 seconds speed 3.
Set aside.
Brush with milk and sprinkle with Sesame Seeds
Bake 15 minutes or until golden

Tip
If using a TM31 saute on Varoma temperature instead of 120.
Make a double batch and freeze once baked
Try different fillings - traditionally spiced lamb mixture works well. Alternatively roast root vegetables with mozarella.
The addition of Semolina makes them crisper and can be rolled quite thin.

such a great recipe so easy and tasty too
Terrible dough mix. It's not like a traditional empanada pastry but more like a bread mix. The dough is too sticky and wet and no amount of flour or kneading could fix it. Definitely would not recommend.
Loved the semolina in the pastry, gave it real crunch. Filling was lovely.

Great recipe!
I used wholemeal flour instead of plain flour (same quantity, 420g) and they turned out well!
For the filling I used:
- beef mince, onion, garlic, some blitzed pumpkin I had leftover, some blitzed cheddar cheese, some pinenuts, worcestershire sauce, nutritional yeast and a small amount of a mixture of seasonings.

Thank you so much for sharing this recipe. I made them for school lunches, I have 2 teenagers. I had left over shredded lamb, so made up a gravy & there you have it .. lamb empanada's . I will next time use the bacon filling to give variety.
I also found mine split open during cooking,.. do you have any reasons why this happened? I thought oven to hot.. I had it on 190 deg fan forced!
