Ingredients

Mandazi Dough

  • 350 g plain flour
  • 100 g sugar
  • 1/2 tsp Cardamon Ground
  • 230 g coconut milk
  • 1 tsp instant yeast, or 7gm Sachet
  • 75 g warm water

Deep Frying

  • 2 litres vegetable oil

Recipe's preparation

    Mandazi Dough
  1. Place all ingredients except oil into TM bowl.

    Mix speed 5 for 10 seconds

    Set timer for 3.5 minutes, Speed Dial to locked lid and press interval button. Dough mode"Dough mode"

    Place into oiled bowl and cover with a clean tea towel or use your Thermomat - wrap loosely.

    Leave in a warm place to prove. About 2-3 hours.

    Working on a lightly floured surface or your Thermomat. Divide dough into 5 portions. 

    Roll each piece into a 10cm circle. And cut into quarters.

    Leave aside on a floured surface while you roll out the remaining Mandazi.

    Leave to rise for 30 minutes.

    Heat oil over a medium heat.

    Fry Mandazi a few at a time turning as they rise. When golden remove with slotted spoon and drain on a paper towel lined plate.

    Serve Warm or Cold.

    Mandazi are great with curry try Mchuzi Wa Kuku.

    Or serve with tea or coffee as a breakfast or afternoon treat.

    Breakfast is the way to go... brings back lots of childhood memories for me.. tmrc_emoticons.) Must try these ones is the recipe much different from the one in the Fast and Easy Indian cookbook?
