Ingredients

Khoresh

  • 1/2 bunch flat leaf parsley, chopped, wash and remove from stem
  • 1/2 bunch mint leaves, wash and remove from stem
  • 1000 grams cubed lamb, see tips
  • 1 onion, large
  • 1/2 teaspoon tumeric powder
  • 4 stalks Rhubarb, cut in 5cm lengths
  • 5 dates, pitted
  • 10 gram olive oil

Pilaff Rice

  • 3 tablespoons Dried Barberries, or Currants
  • 350 grams basmati rice, washed
  • 1/2 teaspoon saffron threads
  • small piece Butter
  • 100 grams toasted pistachio nuts

Recipe's preparation

    Khoresh
  1. Add washed and dried mint and parsley to TM bowl. Chop lock Lid & Turbo 2 secs.

    REMOVE Mint and Parsley and Set Aside.

    Add Peeled Onion to TM bowl. Chop Sp 5 for 4 Secs. Scrape down sides

    Add Tumeric and 10gm Olive Oil and Saute 4 minutes Varoma Sp 1.

    Add Cubed Lamb and enough water to just cover the meat.

    Approximately 200gms.

    Cook for 40 minutes Reverse Speed Soft 100 degrees without MC.

    (Place strainer basket on top of TM Lid to stop splats)

    Add Rhubarb, Mint, Parsley, Dates, Salt and Pepper to taste

    (or TM stock 1 TBSP) and Cook Reverse Speed Soft 100 Degrees for 15 minutes.

    Place in Thermoserver to keep warm whilst you make Pilaff Rice or Saffron Rice.

  3. Weigh Rice into TM basket. And wash.

    Add 900 grams water to TM jug

    Place Strainer basket with rice in bowl.

    Add barberries and saffron and mix into rice a bit.

    Put a cube of butter on top of rice

    Cook for 16 minutes Varoma Sp 2 with MC in place

    Remove Rice fluff it up and place on a platter.

    Decorate with Chopped Nuts.

    You can also arrange salad around the sides to enhance the beauty.

Tip

You can use a Butterflied Leg of Lamb that you cube yourself.

Or even Round Lamb Chops cut from the bone. Include the bone to flavour your dish but remove excess fat.

Look for economy when selecting your lamb as Cubed Lamb can be very expensive. Adapt your cut based on the price.

    Help!

    Can anyone tell me what went wrong with my rice?

    I even tried 2 batches... they both cooked the rice on the bottom but not the top.. I cooked the 2nd batch for 37 mins and still going just to see if that'd work, it didn't :/

    liked the stew tho! Very different but yummy

    Hmmmm... my rice cooked at the bottom and didn't cook the top.. I've made plain rice successfully before, any ideas where I went wrong???

    I stumbled across this recipe when I was looking for something to do with lamb chump chops. It was really easy to make and tasted delicious.  I've never eaten anything similar but it was so good. I severed mine with coucous made with the same ingredients and as rice recipe (except rice). My husband had thrids and Mr 3 polished it off too. I cooked my lamb for an hour as I didn't feel it was tender enough but cooking times always depend on the produce. Will definitely make this again

    Can't wait to try this one tomorrow night. Have 5 for dinner so fingers crossed they all like it. I bet they do. No-one has ever complained when I use my Thermomox.
