Ingredients

Mario's Gluten Free Pizza Dough

  • 490 grams water
  • 1.5 level teaspoons dry yeast
  • 23 grams olive oil
  • 18 grams honey
  • 600 grams gluten free flour
  • 18 grams salt
  • rice flour, for dusting

Recipe's preparation

  1. Place a medium bowl on top of mixing bowl lid and weigh 245g of GF flour. Set aside
  2. Insert butterfly whisk into mixing bowl
  3. Weigh 490g of water into mixing bowl
  4. Add 1.5 level teaspoons dry yeast to water avoiding blades
  5. Weigh in 23 grams olive oil avoiding blades
  6. Weigh in 18 grams honey avoiding blades
  7. Place lid on mixing bowl with MC removed
  8. 2 minutes / speed 2.5 while slowly adding in 245g of GF flour (allowing yeast, oil and honey to mix on its own for first 30 seconds)
  9. Scrape down sides of bowl and butterfly whisk
  10. Place lid on mixing bowl with MC removed
  11. 30 seconds / speed 3 to recombine dough
  12. Remove butterfly whisk
  13. Pour mixture into a bowl and cover with lid or cling wrap and allow to sit for 30 minutes
  14. Clean and dry mixing bowl
  15. Place a medium bowl on top of the mixing bowl lid and weigh 355g of GF Flour. Weigh 18g of salt into the GF flour, mix and set aside.
  16. Lightly oil a large bowl and set aside
  17. After 30 minutes, pour mixture back into mixing bowl
  18. Place lid on bowl without MC
  19. 3 minutes / speed 3.5 while slowly adding GF flour and salt mixture
  20. Scrape down sides of bowl and base of the bowl. Place lid on without MC
  21. 30 seconds / speed 3.5
  22. Place dough into large oiled bowl and shape into a large ball using a spatula.
  23. Cover with lid or cling wrap and allow to sit at room temperature for 1 hour
  24. After 1 hour, divide into 4 equal portions and form into a flat round patty shape. (Dough will be sticky, lightly oiled hands can help with the sticking)
  25. Wrap each dough patty in 2 layers of cling wrap. Place them into the fridge and remove 2 hours before cooking.
  26. Take out of fridge and allow to sit at room temperature for 2 hours or until roughly doubled.
  27. Working with one ball at a time, unwrap and dust with rice flour
  28. Heavily dust a wooden board with rice flour
  29. Place dough ball onto floured board and PRESS (do not stretch) the dough to make a flat round base leaving a thicker edge for the crust. Add more rice flour to the surface and board to avoid sticking
  30. Par bake at 380c until base begins to puff and bubble, then remove
  31. Add desired toppings, place back into the oven at 350c until cooked

Tip

Oiled Hands to help work with the sticky dough.



Using a spatula or bowl scraper to manipulate the dough to form a patty shape will help as dough is sticky to work with.



Wooden board for preparing pizza base but make sure it is coated with rice flour.
