Ingredients

Nonna’s Pizza Dough

  • 350 g water
  • 20 g fresh yeast
  • 5 g dry yeast
  • 450 g pizza flour
  • 1 tbsp salt
  • olive oil, For greasing
  • Butter, For greasing

Recipe's preparation

  1. Weigh water into bowl
  2. Crumble in fresh yeast avoiding blades
  3. Add in dry yeast avoiding blades
  4. 3 minutes, 40 degrees, speed 2
  5. Weigh in flour
  6. Add salt
  7. Knead mode 2 minutes
  8. Tip dough into a large oiled bowl. Dough will be sticky so place bowl back into base of thermomix® and turbo 1 second. Repeat as necessary. Cover bowl with cling film and place in a warm area to double in size
  9. In the meantime, spread butter onto a large 40x27cm tray (large rose gold tray)
    Once dough has doubled, tip onto prepared tray and with oiled fingers spread out evenly
  10. Allow to rest for another 10 minutes minimum in a warm place to rise again
  11. Turn on oven to 250 degrees Celsius. 240 fan force
  12. Top with any ingredients you like.

    some topping suggestions include;
    olive oil, rosemary, Kalamata olives and salt. (As pictured)

    Crushed tin tomatoes, salami and olives.
  13. Place into preheated oven and cook for 13-15 minutes or until base of pizza dough is cooked well and has a nice sound when tapped underneath

Tip

Dough will be very sticky, once tipped into oiled bowl do not touch the dough. Pizza dough is designed for conventional oven not a pizza oven

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
