NEVERFAIL BREAD LOAF
- 300 grams water
- 1.5 level tbsp dried instant yeast
- 500 grams Baker's Flour
- 1 tsp salt
- 1 tsp sugar
- 20 grams olive oil
- 2 tsp bread improver

- Grease two small or one large bread tin, round or rectangle.
- Preheat oven to 200 degrees
- Add water & yeast to bowl. Mix 2 mins, 37 degrees, speed 2.
- Add all other ingredients. "Dough mode" Dough Mode for 10 minutes.
- Allow the bowl to prove in the thermomix bowl with the lid on, until the lid starts to open up.
- Transfer to an oiled surface or thermomat. Split into 2 portions if using 2 tins.
- Allow to prove again until dough is at the top of the tin. If you put a finger mark in the side of the dough and it stays as an indent, it's ready to cook!
- Cook for 20 mins at 200 degrees.
- Ensure it has a hollow sound when tapping the bottom of the loaf. Transfer straightaway to a wire rack to cool.
Tip
Use the pre-clean mode to clean out the bowl once finished.

Is this 200 in a fan oven? I did 180 in my fan and turned out quite doughy in the middle!
A neverfail recipe! I like to substitute oil for grapeseed oil when making this it has a more neutral flavour.
