Ingredients

Rooibos and Cranberry loaf

  • 400 g wheat grains
  • 400 g strong rooibos tea
  • 30 g instant yeast
  • 120 g buttermilk
  • 350 g Baker's Flour
  • 1.5 tsp salt
  • 1 tbsp balsamic vinegar
  • 2 heaped tablespoons honey, liquid

Recipe's preparation

  1. Mill wheat grains in 200g batches.
    Place 200g wheat grains in mixing bowl and mill 1min/sp10.
    Transfer to bowl.
    Place 200g wheat grains in mixing bowl and mill 1min/sp10.
    Transfer to bowl containing other milled grains.
    Place water, yeast, buttermilk in bowl to heat 2min/37degC/sp2.
    Add reserved milled wheat, baker's flour, salt, balsamic vinegar and honey.
    Knead 3min.
    Add 200g cranberries and knead 30sec.
    Turn out dough onto thermomat or floured surface. Form a ball and proof in a warm area for 30min.
    With floured hands form oval loaf or 12 breadrolls.
    Place on a baking sheet or oven mat.
    Sprinkle or spray with a little bit of water.
    Preheat oven to 200Deg C
    Proof for a further 15min before placing in the oven.
    Bake for 35 to 45 min or until loaf sounds hollow when tapped on the bottom.

    Allow to cool for 10 min before slicing and serve warm with butter.

Tip

500g water, 4 rooibos teabag contents.
To create a strong rooibos tea, bring tea to boil 100 Deg C, for 7-10 min/ sp1.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
