- 3 tablespoons canola oil
- 625 grams buttermilk
- 1 level teaspoon bicarb soda
- 1 level teaspoon bread improver
- 1 level teaspoon salt
- 3 level teaspoons baking powder
- 675 grams bakers flour

*Preheat oven to moderate (180C)
*Line a large loaf tin with baking paper
*Add oil, buttermilk, bicarb, salt, bread improver and baking powder to bowl and mix 3sec, speed 4.
*Add flour and mix for 5 sec speed 6
*Scrape down side of bowl using spatula
* Mix 30sec, closed lid position, interval speed
* Use spatula to scrape mixture into tin and bake for 1hr plus until golden brown and hollow sounding when tapped on the bottom.
* cool on a cake rack
Eat on day of baking or slice and freeze.

Tip
Substute 100gms bakers flour for milled whole wheat, millet or buckwheat for variety.
