Ingredients
Dough
- 1 tablespoon Dry instant yeast
- 2 teaspoons caster sugar, (or rapadura, coconut sugar etc)
- 550 grams plain flour
- 125 grams Milk
- 2 tablespoons sunflower oil
- 2 eggs
- 2 tablespoons poppy seeds
- 1 teaspoon salt
- 250 grams warm water
Filling
- 280 grams tahini
- 100 grams walnuts, toasted and crushed
- 185 grams grape molasses or maple syrup, (I used maple syrup)

Add warm water, sugar and yeast to bowl and mix on speed 3 for 5 secs. Add the flour, salt, milk, oil and one egg. Mix on speed 6 for 10 seconds. Them mix for 2-3 minutes . The mixture may be a little wet so add a little more flour and mix on for another minute or so.
Wrap in thermomat and leave for around 30 minutes or until doubled in size.
While dough is rising, mix tahini, toasted and chopped walnuts and maple syrup together and set aside.
Heat oven to 180 deg.
When dough has risen, divide into 8 pieces and roll each piece into roughly a 30cm x 12cm oblong. Spread with tahini filling and, starting from long side, roll up to form a log. Coil the log around itself into a spiral.
Place swirls on a baking tray lined with baking paper and brush with remaining egg that has been lightly beaten. Sprinkle with poppy seeds and bake for 20 minutes until golden and risen.
Allow to cool slightly and serve.
