Ingredients

FILLING

  • 200g Pitted black olives

DOUGH

  • 2 tsp dried yeast
  • 20g sugar
  • 300g Luke Warm Water
  • 500g bakers' flour
  • 2tsp salt
  • 50g Butter
  • 1 egg
  • 160g firm butter (divided into 20g lots)
  • 2tsp nigella seeds
  • olive oil

Recipe's preparation

    FILLING AND DOUGH
  1. Puree olives in Thermomix for 20secs on speed 7 and then set aside. Rinse out Thermomix bowl

  2. Combine yeast, sugar and water in a TM bowl, and mix until yeast dissolves, 10 secs on speed 4.

    Add flour and salt, butter, and egg to yeast mixture. Mix for 6 secs on speed 6. Knead for 11/2 mins with locked lid on interval speed

    Turn dough onto silicon mat. Wrap loosely and allow to rise in a warm place for 30mins. Or brush a large bowl with oil to lightly grease. Place the dough in the bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught free place to prove.

    Divide dough into 8 equal portions and knead in one piece of butter to each portion. On a floured surface, flatten out each one, brush with olive oil, spread over 1 Tbsp olive puree. Roll up into cigar shape. Cut almost in half length-wise, leaving one end attached. Twist the strips of dough individually, then twist them together and join the ends to make a round roll shape. Place on lined tray, proof for 20 mins till double in size

    Brush rolls with egg-wash and sprinkle with Nigella seeds. Bake at 180*C for 25-30 minutes or until golden brown. Remove from oven and place on a wire rack to cool.

    Notes

    These are rich and tasty (Quite Stunning!!) and of course a variety of fillings could be used, sweet or savory. They freeze well and re-heat easily

Tip

These rolls are like "Danish Pastries" and are really light and luscious - a special occasion treat! They freeze well.

A variety of fillings can be used, the rolls in the photos have Parmesan Cheese in them, eg fruit, spice and sugar, or ham, cheese and sundried tomato etc.
