Ingredients

  • 1 Cup Almond meal
  • 1 Cup Buckwheat flour, or gluten free flour of choice
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 tablespoon chia seeds
  • 1 cup walnuts
  • 2 carrots, I used medium size
  • 1 zucchini, medium size
  • 1 cup mashed sweet potato, or pumpkin
  • 2 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon Rice malt syrup, optional

Recipe's preparation

    Pre prep
  1. Pre-heat oven to 180C

  2. Grease loaf tin and line with baking paper

  3. Dry ingredients
  4. Add all dry ingredient to TM bowl and Gentle stir setting"Gentle stir setting" for 20 seconds or until well combined.

  5. Place dry ingredients into a separate bowl.

  6. Wet ingredients
  7. Place carrot and zucchini into TM bowl and chop speed 5, 10 seconds or until desired consistency.  I like mine chuncky.

  8. Add sweet potato (or pumpkin), eggs, oil and sweetener to TM bowl and mix reverse speed 3, 20 seconds or until well combined.

  9. Combine all
  10. Add dry ingredients to TM bowl with wet ingredients and mix reverse speed 3 for 20 seconds or until well combined.

  11. Transfer to prepared loaf tin and cook for 60-90 minutes or until skewer comes out clean

  12. Allow to cool for 10 minutes in tin before removing from tin.

Tip

Lovely served lightly toasted with avocado for a savoury taste, or just some butter and cinnamon for a sweeter taste.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
