Plain Dough

Green Dough

  • 50 g Pandan Leaves Juice
  • 1 g Yeast
  • 6 g brown sugar
  • 6 g Butter
  • 100 g bread flour
  • 1 g salt

Red Dough

  • 60 g steamed beet root added with 25g water
  • 1.5 g Yeast
  • 10 g brown sugar
  • 9 g Butter
  • 150 g bread flour
  • 30 g raisin
  • 1.5 g salt

Recipe's preparation

    Plain dough
    • Place water, dry yeast, brown sugar and butter into mixing bowl, mix 1 min/37 c/ speed 3
    • Add flour and salt, knead 3 min, wrap dough with food wrapper, or transfer dough into a large bowl and cover with a kitchen towel and let it rise in warm place for 30 mins.

     

  1. Green Dough
  2. Repeat the same process as plain dough, basically just replace water with pandan juice.

    • Use 9 pandan leaves, blend it at speed 10 for 3 times, add a bit of water. Squeeze the juice out from the leaves.
    • Place pandan juice, dry yeast, brown sugar and butter into mixing bowl, mix 1 min/37 c/ speed 3
    • Add flour and salt, knead 3 min, wrap dough with food wrapper, or transfer dough into a large bowl and cover with a kitchen towel and let it rise in warm place for 30 mins.
  3. Red Dough
  4. Repeat the same process as plain dough, basically just replace water with beet root and water as indicated.

    • Place steamed beet root and blend it at speed 10 for 5 seconds
    • Add water, dry yeast, brown sugar and butter into mixing bowl, mix 1 min/37 c/ speed 3
    • Add flour and salt, knead 3 min, wrap dough with food wrapper, or transfer dough into a large bowl and cover with a kitchen towel and let it rise in warm place for 30 mins. During the kneading process, pour in raisin slowly from the hole at the middle to allow raisin to be mixed into the dough.
  5. Shaping the bread
  6. Once the dough rise (takes about 30 mins):

    • Shape the red dough into round oval shape. So this is the most juicy part of the fruit
    • Flatten the plain dough and green dough into oval shape enough to wrap the red dough. The plain dough will become the middle layer between the green and red dough. The green layer should be slightly bigger then the plain dough to ensure it can wrap around the 2 inner layers.
    • Now, place the red dough on top of the plain dough, wrap the plain dough around the red dough.
    • Then place the above into the green dough and wrap the green dough around the plain dough.
    • Now you have the watermelon shape.
    • Preheat the oven
    • Then place the watermelon dough into a baking pan (we use watermelon shape!) and place the pan into the oven. Bake in a preheated oven at 180c for 30 mins.
