Ingredients
Dough
- 450 grams water
- 500 grams Wholemeal Bakers Flour
- 250 grams bakers flour
- 3.5 teaspoons instant yeast
- .5 teaspoon Pink Himalayan Salt, Can use any salt
- 3 teaspoons bread improver
- 30 grams olive oil
- 1 tsp sugar

Heat water 37 degrees speed one 3 minutes or until the light stays on alternatively you can use warm water and skip this step
Add yeast and sugar stir speed 4 20 sec
add other ingredients in this order: flours, bread improver, salt and olive oil. Combine speed 6/7 for 30 sec then knead for 7 minutes
split the dough evenly between two small bread tins (approx 23x10.5x9.5cm high) that have already been warming in a sink of hot water let sit for about an hour with thermomat covering the whole top of the sink sealing in the warmth. if you dont have a sink small enough for the thermomat to cover you could use a deep container that will fit the two tins. the hot water should come up half way on the tins
Then knock down and let rise again to top of tin. check the water is still hot and top up with boiling water out of the kettle if not. Once the dough has reached the top of the tins i actually sit them in the cold oven for 12 minutes while the oven is preheating to the 180 degrees
Bake in preheated 180 degrees oven for 15 mins then turn tins and bake further 10-15 mins. may need an extra 5-10 minutes depending on your oven
allow to cool before cutting

Lovely light bread. I didn't have Wholemeal bakers flour so I milled 250gm wheat and then used white bakers flour turned out great. I didn't put in the sink with hot water just put in the bread tin & covered with a Thermomat. Perfect!
I did this receipe in the thermomix bagette tins. I wanted a wholemeal bagette shape. Great for kids afternoon tea topped with all sorts of healthy things.
I actually did three different batches of bread on the same day (was quite a juggle). But I put all the breads on platters and did a little bread tasting test and this bread was the winner.

I must add with the amount of dough I had they were monster bagettes - but the grandkids polished one off on the first sitting!
Sorry, my life is too short to rise in a sink of hot water, I rose them as usual in the oven on 'rise bread'. Fantastic sponge on the bread!!
