Ingredients
Filling
- 6 green apples, cored and sliced (peeling is optional))
- 35 g currants
- 2 tbsp vanilla extract
- 220 coconut cream
- 2 tbsp Coconut sugar
Crumble topping
- 100 g white rice (medium grain or basmati is fine)
- 40 g almonds, raw
- 40 g pecans, raw
- 100 g Cashews, raw
- 50 g coconut flakes
- 2-3 tbsp coconut oil
- 1 tbsp Ghee, (note: ghee is casein and lactose free however still contains other dairy proteins. If you can't tolerate, omit and use extra coconut oil instead)

Pre-heat oven to 180degC.
Arrange apple slices in 25 x 18cm pie dish.
Sprinkle currants over apples slices.
Evenly pour vanilla extract over apples & currants.
Then pour coconut cream over apples & currants.
Sprinkle coconut sugar evenly over top.
Bake in oven for 15min.
Mill rice in TMX bowl, 1min, sp 10.
Add pecans & almonds, mill 5 sec, sp 8.
Add cashews & coconut flakes to TMX bowl & chop 6 sec, sp 5.
Add coconut oil & ghee (if using) & combine on "Counter-clockwise operation" 10 sec, sp 3 until mixture clings together & resembles crumbs.
After 15 minutes, remove dish with filling only from oven.
Sprinkle crumble on top.
Return to oven & bake for a further 15 minutes at 180degC.

Tip
If you have freeze dried apple on hand, place 4-5 slices into a clean, dry TMX bowl & chop for 2-3 sec on sp 4.
Sprinkle evenly over crumble topping before placing in oven.
