Ingredients

BISCUIT BASE

  • 250 grams butternut snap cookie
  • 80 grams melted butter

CONDENSED MILK

  • 125 g water
  • 225 g raw sugar
  • 110 g powdered milk
  • 1 pinches salt

CHEESE CAKE

  • 1 tbsp gelatin
  • 1/4 cup Boiling water
  • 150 g macadamia nuts
  • 250 g diced fresh mango, 2cm
  • 2 x 250g g cream cheese
  • juice of 1 lemon

TOPPING

  • 250 g Fresh Mango, cut into slices
  • 1 pack of mango flavoured jelly, add water as to description on pack

Recipe's preparation

    BASE
  1. 1. [/b]add biscuit 20sec speed 5 MC on
    2.[/b] add butter 20sec 4 MC on
    3.[/b] Scrape down sides of the bowl with the spatula and transfer into a 23cm spring form pan
  2. CHEESE CAKE
  3. 1.[/b] Add macadamia nuts 3 sec speed 4.5 MC on set aside
    2.[/b] in a sepearate cup add boiling water and desolve gelatin and set aside
    3.[/b] add all condensed milk ingredients 3min 100deg speed 4 MC on. (this step can be changed to adding a can of condensed milk)
    4.[/b] add cream cheese 30sec speed 5 MC on
    5.[/b] add lemon and desolved gelatin 30sec speed 4 MC on
    6.[/b] add diced mango and macadamias 4sec 4
    poor filling onto cooled base and spread evenly
  4. TOPPING
  5. 1.[/b] add sliced mango ontop
    2.[/b] make jelly as per instructions.
    i pop the cheese cake and jelly into the fridge until the jelly is just starting to set.... I then poor ontop of cheese cake.

    refridgerate for 3 hours or overnight
