Ingredients

  • 170 g dark chocolate
  • 85 g milk chocolate
  • 250 g white chocolate
  • 200 g white marshmallows
  • 150 g evaporated milk
  • 150 g raw sugar
  • 1 tsp vanilla extract
  • 1/2 tsp Peppermint Extract
  • few drops Green Food Colouring
  • pinch salt
  • 8 Arnotts Mint Slice biscuits

Recipe's preparation

  1. Line a 20cm x 20cm square tin with foil or cling wrap.  Don't use baking paper as fudge will stick to it.

     

    Place dark choc and milk choc into TM bowl.  Chop sp 9, 7sec. Set aside.  Rinse bowl and dry thoroughly.

     

    Place white choc into TM bowl and chop sp 9, 7 sec.  Set aside into a bowl.

  2. Place marshmallows into TM bowl and chop sp 9 3 sec.  This will stop TMX from wobbling in cooking process.

    - add evap milk

    - add sugar

    - add pinch salt

    Cook 4 min, 60 degrees, sp 7.

  3. Remove TM bowl from console and place bowl with blitzed white chocolate on top and weigh in 300g of melted marshmallow mixture.  Set aside.

  4. Place TM bowl with remaining marshmallow mixture back into place.  -  add reserved blitzed dark and milk choc

    -  add vanilla extract

    Cook 1 min, 50 degrees, sp 3.

    Pour into lined tin.

    Refridgerate whilst preparing next step.
    Wash out bowl and dry thoroughly. 

  5. Pour white choc amd marshmallow mixture into TM bowl 

    -  add peppermint extract

    -  add few drops of green food colouring

    Cook 1 min, 60 degrees, sp 3

    Pour over chocolate base.

  6. Chop* mint slice biscuits and spread over.  Slightly press the biscuit bits into the fudge.

    * I chopped mine by hand only because I'm fussy about presentation, but there's no reason why you couldn't use the TMX if you want to.

     

    Refridgerate for a few hours till set, preferably overnight.

    Slice into small bite size squares.

    Enjoy!

Tip

This fudge is very decadent, moorish and not for the faint hearted - but OH SO GOOD!!! Try stopping at one - you'll find it hard and don't say I didn't warn you! tmrc_emoticons.-)

 

This recipe is adapted from Bubble and Sweet - Peppermint Cookie Fudge.  I used raw sugar instead of white and reduced the quantity & am considering omitting it altogether next time!

    Yes you are right it is meant to read chocolate and not sugar in point 3, I think I must've been extremely tired when typing and didn't proof read!

    This sounds VERY nice and I want to try it but will change it from green/mint to pink/strawberry flavour  -  not sure yet what to put on top  -  nuts, mini marshmallows or buscuits?  

    In point 3. did you mean blitzed white chocolate? and not blitzed white sugar? tmrc_emoticons.~
