Ingredients

Biscuit Base

  • 180 grams cubed butter, Use Nuttelex for Dairy free
  • 220 grams sugar
  • 300 grams Flour, Plain
  • 1/2 teaspoon baking powder
  • 1 egg

Custard

  • 70 grams raw sugar
  • 50 grams Corn Flour
  • 2 eggs
  • 500 gram Milk, Replace with Soy for Lactose free Custard
  • 20 grams cocoa

Berry Sprinkle

  • to taste Rasberries or other berries, I use frozen

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Biscuit Base
  3. Place sugar in TM bowl & mill for 10 seconds, speed 10

    Add Butter & cream 30 seconds, speed 6. Add Egg before creaming process finishes

    Scrape down sides of bowl & add Flour & Baking Powder. Set TM for 30 seconds on speed interval speed. Repeat by scraping down sides and mixing again if necessary

    Place mixture (doughy texture) into lined tin & press until mix is firmly in place and evenly spread

    Cook for approximately 20 minutes until golden

     

  4. Berry Sprinkle
  5. Blitz Berries until chopped to preferred consistency

  6. Chocolate Custard
  7. Place sugar into TM bowl & mill 10 seconds, speed 9. Scrape down sides with spatula

    Add milk, cocoa, eggs & cornflour and cook 7 minutes, 90 degrees celcius, speed 4

    Pour onto cooled base. Do not leave to sit as it will thicken very quickly!

    Sprinkle blitzed berries over top and refridgerate till set (approx 2 hours)

Tip

If you want the custard layer to be thicker double the custard recipe

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Hi. What temp do you cook base on? Did u use baking beads?

     

    when u say speed intervals. Do u mean like speed 5 10 seconds then scrap down & repeat twice so your doing 30secs in total?

    To use as a Christmas dish add a layer of green jelly and a layer of red on top of custard and allow to set tmrc_emoticons.)
