Ingredients

Base

  • 250g g Plain chocolate biscuits
  • 130g Butter

Cheese Filling

  • 300g thick cream
  • 500g Philly cheese
  • 2/3cup castor sugar
  • 2tsp vanilla essence
  • 100ml hot water
  • 1TBS gelatin

Fudge Filling

  • 200g chocolate
  • 25g Butter
  • 1/2can condensed milk

Fudge Topping

  • 100g chocolate
  • 10g Butter
  • 1/2can condensed milk

Recipe's preparation

    Base
  1. Crush biscuits speed 5 for 5-10sec till a fine crumb. Set aside

    Melt butter 60deg sp1 3-4mins

    Combine biscuit and butter in a bowl

    Press mixture into a cheesecake tin leave to set in fridge minimum 30mins

     

  2. Fudge Filling
  3. Chop chocolate and butter 10 sec sp6

    add condensed milk

    cook on varoma temp sp2 for 10mins

    Pour over biscuit base leave to set in fridge for at least 45mins

  4. Cheese Filling
  5. Mix hot water and gelatin together in a bowl leave to cool.

    Whip cream (using butterfly) 20-30sec sp4 set aside

    without washing the bowl add the cheese, sugar and vanilla essence mix sp3 30-40sec or till combined

    Fold the cream through the cheese mixture in a bowl

    add the cooled gelatin mixture

    Spread cheese mixture over base and fudge filling that has been setting in the fridge. sit back in fridge to set for approx 2hrs

  6. Fudge Topping
  7. Chop chocolate and butter sp6 5 sec

    add condensed milk

    cook varoma temp sp2 10mins

    Pour fudge topping over the cheesecake, this sets very fast (almost as it hits the cold cheese filling) so try to spread evenly quickly

Tip

There seems to be a lot of steps and ingredients, but its actually quite quick and relatively simple. There is a lot of cooling/setting time in the fridge, so you can do this over the course of a day in between household jobs, which is what i find easiest. I have converted this from a non thermomix recipe. This is a very rich, decadent cheesecake, a little bit goes a long way, a huge hit with kids and adults in this house.
