Christmas puddings
- 1000 grams 1kg Dried Mixed Fruit
- 160 grams dried cranberries
- 70 grams Dried Australian Fruit (blueberries)
- 250 grams (1 Cup) Bailey Irish Cream
- 160 grams (1 cup) Chocolate Chip bits
- 750 grams Mocha Milk
- 525 grams (3 cups) S R Flour
Brandy Custard
- 60 grams Raw Sugar (brown)
- 3 teaspoons cornflour
- 2 --- eggs
- 450 grams Milk
- 50 grams brandy
- 1 tsp vanila extract

Soak all your dried fruits in the Mocha milk and baileys Irish Cream overnight to make the fruit plump and juicy.
preheat oven to 125 degrees...low and slow cooking
You will need to cook in two batches...unless you own 24 silicone muffin cups and 2 x 12 muffin trays.
place a line down your pre soaked fruit (overnight) to divide mixture in thirds (3).
place one 1/3 into Tm bowl and add one cup of the SRFlour and 1/3 of the chocolate chips....mix in reverse "Counter-clockwise operation" on speed 5 for 10 sec, scrap down sides, check if mixtue is combined...repeat until combined....set aside in the container you soaked the fruit in...and do remaning 2/3 of the soaked Fruit mixture in the same manner...1/3 of mixture and 1 cup of the SRF and 1/3 choc chips...
hand mix all together once all gthree lots are complete and spoon into silicone cups in muffin trays.
Cook in the oven on the lowest shelf on 125degrees for 1 hour...same as a cake...should be not sticking to a knife...but not overcooked as your muffins will be to dry.
If you are making mini muffins...reduce the cooking time to 40mins...and check...
These can be made a few days ahead and stored in an air tight container for 3-4 days...
or i made up my mixture after soaking O/N and placed back in fridge till needed later in the day and spooned in on the day...hot muffins out of the oven with hot Brandy custard....yummmy.
you can also be made without the Baileys in the muffins...and Brandy....use Custard chip receipe...you could also do as Chocolate custard...if you have chocolate lovers like me

Tip
If you don't like milk you can soak in your favorite fruit joiuce and add rum instead
Wrap in celephane with ribbon and card for little Christmas gifts.

I have used a pkt of white choc buttons....to drizzle over the wreath...chop 5 sec on speed 5 then melt...2mins 20 sec 60 degrees on speed 2...fresh berries and jaffers and green icing as leaves...but you could use mint leaves as well if limited for time...but hot muffins strait out of the oven are perfect...so do one wreath and cook first and decorate...then on the big day have the silicone cased muffins (tray 24) ready to pop in the oven...one hour....put the custard on...choc or vanilla...your pick...serve HOT !!!!!

I'm sure you could do as a large Christmas cake as well...cooking time would need to be adjusted.
