Ingredients

  • 200 g raw sugar
  • 120 g Butter, chopped
  • 1 teaspoon bicarbonate soda
  • 1 cup of milk
  • 1 egg, lightly whisked
  • 2 tablespoons golden syrup
  • 300 g plain flour
  • 3 teaspoons ground ginger

Recipe's preparation

    METHOD
  1. Lightly grease and line 25 x 13 cm loaf tin. 

    Preheat oven to 170 degrees.

  2. Add sugar to TM bowl and mill 10 seconds / Speed 10.

  3. Add chopped butter to TM bowl and chop 5 seconds / Speed 8.

  4. Insert Butterfly and whip for 2 minutes / Speed 3.5.

     

    Remove Butterfly and scrape down the sides of the TM bowl with Spatula.

  5. Add Bicarbonate Soda to the milk and stir.

  6. Add milk mixture, egg, golden syrup, plain flour and ground ginger to TM bowl and mix 50 seconds / Speed 5. 

  7. Scrape down sides of TM bowl with Spatula and mix for further 10 seconds / Speed 5.

  8. Pour mixture into tin and bake for 50 - 60 minutes.  Test cake is cooked through with a cake skewer.

Tip

To get the mixture off the blades, turn to Closed lid"Closed lid" / Turbo / 1 second x 3 times.

 

This recipe has been converted from my Mother's old hand written Recipe book.  I have fond memories of my Mother baking this cake and indeed eating it too! lol
