Ingredients

BASE

  • 1 packet Arnotts Chocolate Ripple Biscuits
  • 150 g Butter, chopped into blocks
  • 50 g Dark Cooking Chocolate squares, broken into individual squares

FILLING

  • 3 teaspoons gelatine
  • 1/4 Cup water, boiling
  • 2 x 250 g Philadelphia cream cheese, at room temperature, cut into thirds
  • 75 g caster sugar, (75g Raw Sugar 1 second / Speed 9)
  • 200 g Arnotts Original Tim Tam Biscuits, chopped into 1/4's
  • 300 ml Thickened Cream, whipped

DECORATE

  • 1 punnet strawberries, washed, and sliced
  • milk chocolate, shavings to decorate

Recipe's preparation

    FILLING
  1. Line base of a 20cm spring form tin with baking paper

     

  2. Add butter to the Thermomix bowl and melt for 3 minutes / 60 degrees / Speed 2

    Add biscuits and dark chocolate and mix for 15 seconds / Speed 6

     

    Press mixture evenly over base of spring form tin using the TM Measuring Cup.

     

    Cover and refridgerate for 30 minutes while preparing filling.Clean and dry bowl.

  3. FILLING
  4. Add cream to the TM bowl add Butterfly, 30 seconds / Speed 3.5Set aside.Clean and dry TM bowl.

  5. Sprinkle gelatine over 1/4 cup boiling water and stir until gelatine is completely dissolved.  Set aside and allow to cool slightly.

  6. Add Philadelphia Cream Cheese and TM Caster Sugar into TM bowl  and mix 30 seconds / Speed 6. Scrape down sides of bowl.

  7. Gentle stir setting"Gentle stir setting" Add gelatine mixture and chopped Tim Tam biscuits 10 seconds / Counter-clockwise operation"Counter-clockwise operation" / Speed 6

  8. Add whipped cream and combine 15 seconds / Counter-clockwise operation"Counter-clockwise operation" / Speed 4

    Pour filling into prepared tin and place in refridgerator to set.

  9. Decorate
  10. Remove cheesecake from the spring form tin.

     

    Decorate with chocolate shavings and strawberries.

     

    Chill in refridgerator for 2-3 hours until cheesecake is set.

    My son & his girlfriend made this & it was absolutely delicious!
    I would add another packet of Tim Tams to this & line the outside rim.

    Just made this for tomorrow. I didn't have enough Tim tams so used what I had in the mixture along with 2 cap fulls of coffee flavoured baileys. Using chopped Oreos and kit Kats for the top along with strawbs! I'm a gouge lover of cheesecake. Can't wait!

    OMG! I made this and it was amazing, it was first time making a cheesecake ever and it turned out perfectly. I  made it for my friends 30th birthday and noone could believe that I had made it. Even the waitstaff at the restaurant had some! Thanks so much for the recipe! I'll be doing this one again!

    I am wanting to make this to take to my friends birthday dinner, do you think I can make it a day in advance and just do the chocolate shaving and strawberries at the last minute?

    This is the first time l have  attempted to make a cheesecake in my thermomix.  I was amazed at how easy it was, and how delicious it tasted.  Made it for my sons birthday and everyone loved it.  It wasn't too rich either which was surprising!!   I think this will become a regular desert in our household.  Thank you for sharing.
