Ingredients

Coconut, Apricot and Date Slice

  • 250 g Packet Milk Arrowroot Biscuits
  • 200 g Butter
  • 100 g dates
  • 100 g dried apricots
  • 1 tsp vanilla essence
  • 50 g dessicated coconut
  • 1 tbsp Coconut for Topping

Recipe's preparation

    Coconut, Apricot and Date Slice
  1. 1. Add biscuits and crush for 15 seconds / speed 5 - set aside

    2. Add butter, dates and apricots and chop for 8 seconds / speed 7 - scrape down side of bowl

    3. Cook for 5 minutes / 100 degrees / speed 1 - add vanilla in last 30 seconds

    4. Add crushed biscuits and coconut and mix 10 seconds / reverse / speed 4

    5. Line a slice tin with baking paper and pour mixture in and press down firmly

    6. Sprinkle top with extra coconut and press again

    7. Place in fridge or freezer to set and cut into desired portions

Tip

Cut slice can be kept in the freezer and is a nice addition with your coffe or tea

    I swapped the biscuit for 125g almonds (ground first into almond meal) and 125g oats, also ground. Then followed recipe exactly and worked perfectly. Might try the coconut oil next time. Thanks!

    So yummy!! Thank-you ...everyone loved it! Used 100g coconut oil instead of butter.

    Oh for anyone interested I cut the butter down to 130 gms and it stayed together  perfectly.

    Wow a great slice Michelle so easy. I didnt tmrc_emoticons.) even take the biscuits out just chopped the fruit with it in and then melted the butter and it worked fine. it was gone in a day in my house.

    this is going to be made on a regular basis now.

    Delicious!! I had a packet of arrowroots to use up seeing as my son has decided he doesn't like them anymore! I substituted coconut oil for the butter and shredded coconut for more texture. So tasty! I'm making this again tomorrow for morning tea Cooking 7

    Thanks so much for this! Was wondering what I could make for afternoon tea so whipped this up before school pick-up.  It was then demolished when the troops arrived home.  So QUICK and held together perfectly.  Might try it with some dribbled choclolate on top next time.......
