Ingredients
Curry Icecream and Wonton Cups
- 1 tsp Vanilla Bean Paste
- 1 piece Long Red Chilli Split and Seeded
- 1 piece cinnamon quill
- 1/2 tsp tumeric powder
- 6 pieces fresh kaffir lime leaves
- 1 tsp Crushed Ginger or 1cm fresh
- 1 stalk Lemon Grass White Section Only
- 600 g whipping cream
- 3/4 cup icing sugar
- 1 package wonton wrappers

Preheat oven 180C
Cut wonton cups in circles to fit a mini cupcake tin. Brush tin with oil, place circular wonton skins into place and brush again with oil. Bake for 3 minutes until lightly golden and crisp. Leave to cool on wire rack. (Best to make these when you are just about to serve the ice cream. Make as many as you like, or even lay the wonton wrappers flat on a baking tray and serve as a wafer style cracker)
Place Vanilla, chilli, cinnamon, turmeric, lime leaves, ginger and lemon grass in TMX bowl, blitz 10 sec/speed 8. Push down ingredients back into the bowl and blitz for 5-10 sec/speed8 or until very fine.
Add cream 15min/80 degrees/speed 1. Do not allow mixture to boil.
Slowly turn to speed 9 for 40 seconds to puree all ingredients.
Place into freezer to freeze 3-4 hours or best over night. Take the ice cream out of the freezer, cut into medium size pieces and place into TM bowl. Mix for 20 sec/speed 9 until all of the mixture has been mixed properly then place back into the freezer.
Freeze for approx 4 hours. To serve, place one teaspoon of the ice cream into the wonton wrappers as a palette teaser.
This recipe is very different but it is really lovely to eat.

Tip
Please note that this is not the type of icecream that can be eaten by the spoonful. It is only meant to be made as a palet teaser. You can make this icecream with eggs to allow it to set better.
Do not buy the white coloured wonton wrappers as they do not bake as nicely as the normal egg wrappers.
