Buttercream frosting
- 250 g unsalted butter, Softened, and Cubed
- 500 g icing sugar
- 1 tsp vanilla
- Colouring, optional

- Place butter in mixing bowl. Cream for 20 seconds / Speed 5. Or until butter changes to a pale / white colour.
- Insert butterfly whisk. Add 250g of the icing sugar. Whip for 1 min / speed 3.
- Scrape sides of bowl. Add remaining 250g icing sugar, 1tsp vanilla, colouring (if using). Whip 40 sec / sp 3. Scrape sides and whip again 40 sec / sp3
- Store buttercream in airtight container or zip lock bag in fridge for up to a week. Or in freezer for up to 3 months. Thaw the day beofre, and bring to room temp before re-whipping.
