Ingredients

GF Chocolate Eggplant Brownies

  • 200 g eggplant, peeled and diced
  • 150 g Dark cooking chocolate, GF, broken into pieces
  • 60 g coconut oil, g
  • 60 g pitted dates, chopped
  • 1/2 tsp salt
  • 3 eggs
  • 1 tsp Baking Powder, gluten free
  • 80 g almond meal

Recipe's preparation

    Procedure
  1. Preheat oven at 170C

    Dice eggplant and steam for 15 minutes or microwave until soft

    Beat eggs and baking powder at 10s/Sp 4 and set aside

    Dice dates 20s/Sp5

    Place steamed eggplant in TM bowl, add chocolate pieces and coconut oil and mix 1m/Sp 2/reversed, allowing heat from steamed dived eggplant to melt chocolate

    Add chopped dates and salt until smooth 1m/Sp 5.

    Add egg and baking power mixture and mix 1m/Sp 5.

    Add almond meal 1m/Sp 4

    Spread mixture onto baking tray lined with buttered greaseproof paper and bake for about 20m at 170C. When cool remove greaseproof from tray and allow to cool completely before cutting up as required.

Tip

Check brownies are cooked by cutting through and checking knife is clean.

Can be served with raspberry chia jam as dipping sauce
