Ingredients
2 X PORTIONS EDC SWEET SHORTCRUST PASTRY
- 300 gram plain flour
- pinch sea salt
- 140 gram unsalted butter, Chilled, Roughly Chopped
- 60 gram icing sugar
- 4 egg yolks
PIE FILLING
- 1 litre water
- 1 Gramma
- 200 gram castor sugar
- 2 juice of lemons
- 1 teaspoon cinnamon sugar
- 2 tablespoon sultanas, Soaked in Boiling Tea while preparing the rest of recipe
- 1 egg, Whisked for Brushing

Fill TM bowl to 1L mark with water.
Chop Gramma into 1-2cm cubes & place in simmering basket, varoma basket & tray (depending on the size of the gramma)
Cook for 40 minutes - Varoma, Speed 3
Place Gramma back in TM Bowl - Add Lemon Juice, Cinnamon & Castor Sugar. Combine - 30 sec, speed 5.
Strain Sultanas - Add to bowl - 5 sec "Counter-clockwise operation" speed 1
Follow EDC directions to make 2 batchs of Sweet Shortcrust Pastry. Roll & line 2 pastry flans or large pie dish. Blind Bake.
Pour filling into prepared pastry. Top with Sheet of pastry or pastry lattice.
Brush with Egg & Sprinkle with Cinnamon Sugar.
Bake 15-20 mins at 180 or until golden brown.

Tip
Sultanas can be left out if you prefer.
Serve with Double Thick Cream or Ice-cream.
Strain as much liquid as possible from Gramma to avoid pastry going mushy!
