Pudding
- 1320 grams Milk
- 2 level tbsp sugar, can use xylitol
- 300 grams fine semolina
- 1/4 level teaspoons ground mastiha, (mastika)
- 3 level tbsp Orange Blossom Water
- 3 level tbsp Rose Water
Topping
- 250 grams Mascarpone cheese
- 230 grams thickened cream
- 1 level tbsp icing sugar
- 150 g pistachio, chopped
- 1 piping bag
Sugar Syrup
- 200 grams sugar
- 100 grams water
- 2 level tbsp Orange Blossom Water
- 2 level tbsp Rose Water

- Place all pudding ingredients into tm6 and place on thickening mode. (this will take approx 12 minutes)
Pour and spread out into a medium sized tray.
Set aside to cool.
Wash bowl. - Insert butterfly whisk.
Add all topping ingredients.
Whip on speed 3 with m/c off until desired whipping consistency achieved.(mine usually takes around 30 seconds, so keep a look out. Place in piping bag.
Wash bowl.
Decorate cooled pudding with crushed pistachios and pipe on your mascarpone topping.
Place in fridge for a few hours. - Place all ingredients in bowl. Cook 4 minutes/100 degrees/ Speed 4.
When ready to serve, drizzle cooled sugar syrup over each individual piece or over entire tray of you prefer.

*Alternatively you can place the sugar for xylitol
*Alternatively you can replace the mascaporne and cream topping for fresh Ashta.
