Ingredients

Lemon Curd

  • 150 grams caster sugar
  • peel of 1 lemon
  • Juice of 2 lemons
  • 2 eggs
  • 1 egg yolk
  • 100 grams Butter (Softened)

Gelatin

  • 2 tbsp cold water
  • 1 tsp gelatin

Recipe's preparation

    METHOD
  1. Place the sugar and lemon peel into the thermomix bowl Closed lid"Closed lid" and chop for 30 sec/speed 9. Scrape down sides of the bowl.

    Add remaining Lemon Curd ingredients Closed lid"Closed lid"  and chop for 5 sec/speed 7. Scrape down sides of the bowl.

     

    Insert Butterfly and cook 8 min/80°C/speed 3.

     

    In a separate small bowl add water and sprinkle over gelatin powder. Leave for a few minutes to dissolve.

     

    Add dissolved gelatin to cooked ingredients in thermomix bowl and mix 15 sec/speed 1.

     

     

Tip

If using for Lemon Cheesecake topping, place curd onto prepared cheesecake and place in fridge to set. Curd will thicken in about an hour. 

If required for a smooth spread, leave out the gelatin.

    Just made this to top a lemon-lime cheesecake. Doubled the quantity as its a large cheesecake and it has worked out beautifully. Looks very professional if I do say so myslf.
