Ingredients
Lemon Curd
- 150 grams caster sugar
- peel of 1 lemon
- Juice of 2 lemons
- 2 eggs
- 1 egg yolk
- 100 grams Butter (Softened)
Gelatin
- 2 tbsp cold water
- 1 tsp gelatin

Place the sugar and lemon peel into the thermomix bowl "Closed lid" and chop for 30 sec/speed 9. Scrape down sides of the bowl.
Add remaining Lemon Curd ingredients "Closed lid" and chop for 5 sec/speed 7. Scrape down sides of the bowl.
Insert Butterfly and cook 8 min/80°C/speed 3.
In a separate small bowl add water and sprinkle over gelatin powder. Leave for a few minutes to dissolve.
Add dissolved gelatin to cooked ingredients in thermomix bowl and mix 15 sec/speed 1.
METHOD
Tip
If using for Lemon Cheesecake topping, place curd onto prepared cheesecake and place in fridge to set. Curd will thicken in about an hour.
If required for a smooth spread, leave out the gelatin.

Beautiful, easy & very yummy... Great to use for cheers cake & tarts..!!!
Just made this to top a lemon-lime cheesecake. Doubled the quantity as its a large cheesecake and it has worked out beautifully. Looks very professional if I do say so myslf.
