- 150 grams raw sugar
- 200 grams licorice
- 2 egg yolks
- 1 pinch salt
- 1 teaspoon vanilla essense
- 500 grams thickened cream

I'm cooking this todayRecipe's preparation
mill sugar down to caster sugar 10sec/speed 9.
add licorice and combine 20sec/speed 9.
add remaining ingredients and cook 6 min/80°/speed 4.
Pour mixture into container and freeze for 1-2 days.
Cut frozen mixure into small pieces and add half the amount to machine and blend 10sec/speed 9 and put back into container. repeat the same for the other half.

it is so decadent. Have experimented with Banana,Passionfruit and Galliano, also Blueberry and tomorrow I am trying Macadamia and Caramel Swirl. Very easy.

My ice cream has turned out brown. What is the best type of Licorice to use?

Made this using a good brand of liquorice. It was very thick and sticky when trying to cut up to process. I found I needed to process it for three times the recommended time to get it more aerated like ice cream. It's a strong flavour, and I love liquorice so next time I will try putting in a little less liquorice and a bit more cream. Very yum overall And still waiting to try the final frozen product. The bowl tastes good though.
This is amazing!! Its more of a gelato than ice cream- you can eat it right out of the bowl before it has even set. It is frustrating to wait 2 days before blending it up again and serving- but well worth the wait. I have made it a few times with differnt types of licorice- using soft licorice you get a brown coloured ice cream- using the harder licorice you get a darker colour.
I know you made the Licorice icecream awhile ago and it seems logical to only freeze for 4 hrs each time but what happens after the second round of 4 hrs is that then icecream which you can put into a icecream keeper or do you have to eat it all at one sitting, really new at Thermomix and not tried icecream before, hope you can help
I made this Licorice icecream taste yummy but it brown colour not black like the one in your photo how can I turn black??

this turned out fantastic ... so creamy next time will line the container with glad wrap so hopefully will be easier to get out. Also, had trouble getting the speed up to 9 !!! had set quite thick and the blades couldnt cut through it even though I had cut small. Not sure what happened there.
Any type of licorice recommended?
