- 40 g dessicated coconut
- 200 g mango
- 200 g frozen mango in pieces
- 300 g coconut milk, frozen into ice cubes

Weigh in the dessicated coconut and blitz for 20 seconds/speed 10. I love the texture that this creates but you can adjust the roughness of the coconut in this step to suit your personal taste.
Add the fresh mangoes, frozen mangoes and coconut milk to the TM bowl and blitz again for 30 seconds/speed 10 with the aid of the spatula.
Insert into mouth, YUM!!!

This would take over 24 hours in a normal kitchen and us lucky Thermomix users can have it in under one minute!

Super simple to make! Would definitely recommend adding some sweetener if you like your ice cream sweet.
Took only a couple of minutes. didnt use all frozen ingredients but worked a treat
I didn't have time to freeze the coconut cream so I just used less and threw in some ice cubes. also used only frozen mango. Delicious. I have put rest into Tupperware icypole holders. Yum even for a quick brekkie
I've made this a few times and it is always a winner. Tonight I used banana instead of mango and it was still fabulous! We try to be sugar free as much as possible, so the sweetness from the fruit was enough for us.
You could absolutely add in sugar if you wanted to or substitute with rapidura or honey for a more natural sweetener.
I wrote this recipe right in the height of summer when mangoes are at their sweetest, so I agree that perhaps that could be a factor as to why mine was sweet although we don't eat sugar at all and have much more sensitive tastes when it comes to sweetness.
Mint would be an awesome adition too, I'll try that next time!

This was a bit disappointing. It really needed a bit of sugar to give it some depth and sweetness. Maybe the mangoes weren't very sweet. I would add mint next time too..
