Mango mousse
- 2 large mangoes
- 1T freshly squeezed lemon juice
- 65g pure icing sugar
- dash vanilla extract
- 1T Gelatine powder
- 1/4 cup hot water
- 300ml carton of whipping cream
- selection of fruits to serve.

- 1. Peel and chop mangoes.
2. Add to the "Closed lid" along with the lemon juice, vanilla and icing sugar.
3. Blitz sp 5/20secs.
4. In a small mug, dissolve gelatine in the water and add to the "Closed lid" .
5. Combine sp4/10 secs
6. Transfer to a large bowl.
7. Put the butterfly in the "Closed lid" . No need to wash the bowl
8. Pour cream in and whip until thick sp4/20secs. But watch it...can be more or less.
9. Fold the cream into the mango mixture.
10. Pour into a serving dish, set in the fridge, and serve with seasonal fruits and extra mango if desired
How to:
Tip
Make the most of (cheap) seasonal mangoes.
Very delicious and refreshing. Can also be frozen as icecream.

A great simple recipe. I also halved the sugar and defrosted frozen mangoes (draining off any excess liquid). My daughter and husband inhaled it which is always a great sign! This will be a summer go to dessert.
This is really delicious. Very easy and quick to make. I halved the sugar as I reckon it would be sweet enough, and it was! Recommend this recipe if you’ve lots of mangoes. Yummy the next day too. Thanks for sharing.
