Ingredients

  • 250 grams medium-grail rice
  • 1.25 litres full-cream milk
  • 1-2 sticks cinnamon, mexican if you can get it
  • 1 piece lemon rind, i use a peeler
  • 395 gram sweetened condensed milk, or make your own
  • 1 pinch ground cinnamon
  • 1.4 litres Boiling water, i just boil the kettle

Recipe's preparation

  1. Weigh rice into basket, add 1.4 liters boiling water (from kettle), cook 7 minutes, varoma, speed 2, with no mesuring cup.

     

    remove basket and set aside, empty water from bowl

     

    Add cold milk, cinnamon stick, and lemon rind to bowl and cook 10 minutes, varoma, Counter-clockwise operation"Counter-clockwise operation"  reverse, speed Gentle stir setting"Gentle stir setting"  stir. Mc off.

     

    Add rice back to milk (wihtout steamer) in the bowl and cook 10 min, varoma, Counter-clockwise operation"Counter-clockwise operation"  reverse, speed Gentle stir setting"Gentle stir setting"  stir. Mc off.

     

    If bowl starts to boil over, drop temperature to 100 degrees.

     

    Stir the mixture well, then cook another 10 min, 100 degrees, Counter-clockwise operation"Counter-clockwise operation"  reverse; speed 1. Mc off.

     

    Add the can of condensed milk, cook 10 min, 100 degrees, Counter-clockwise operation"Counter-clockwise operation"  reverse; speed 1, mc off.

     

    Check that rice is cooked, and Spoon into bowls and dust with ground cinnamon.

Tip

i have not tried this with the butterfly but I expect it would work, just change the speeds if needed

i would also like to hear if anyone can make this with other types of milk - again I ahve not tried tmrc_emoticons.-)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This went down a treat! Everybody loved it. I didn't have any medium grain rice, so I used long grain and it worked just as well - thickened up and was perfect. Thanks

    Beautiful recipe.  Didn't change a thing and it was beautiful.  Have always baked my rice pudding in the oven - won't bother anymore.  This was beautiful.  Maybe to make it a little more 'chef fly' could serve it with caramalised pineapple slices or rhubarb or pear or .....  Yum - thanks for putting it up for all to share and enjoy.
