Ingredients
Coconut Mix
- 2 egg whites
- 200 g honey
- 1 pinch salt
- 1/4 teaspoon bi-carb
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 200 g coconut oil
- 200 g Desiccated Coconut
- 3 tablespoon Berry coulis
- Extra desiccated coconut
Berry Coulis
- 100 g fresh or frozen strawberries
- 100 g fresh or frozen blueberries
- 70 g honey
- juice of 1/2 lemon

Prepare Berry Coulis.
Insert Butterfly into a clean dry bowl.
Add egg whites, honey, salt, extracts and Bi-Carb into bowl.
Whip 7min/70C/sp4.
Re-start at sp4 with residual temperature.
Add coconut oil by the teaspoonfuls with blades running.
Reduce to sp2.5 and add desiccated coconut, in stream form, through lid opening.
Press half the mixture into a lined 16x16x4 cm tray.
Add berry coulis to the mix in the bowl and mix at sp2.5.
Spread the coulis-coconut mixture on top of first layer.
Sprinkle with the extra coconut.
Refrigerate for 2 hours.
Cut into small cubes, serve and watch it dissapear!
Add all ingredients to bowl and cook for 4min/90C/sp4.

This coconut ice holds quite well at room temperature in cooler months.
