Ingredients
Nanna's Tea Cake
- 300 g Butter, room temperature
- 300 g sugar raw
- 1 tsp Vanilla Bean Paste
- 5 eggs
- 1 lemon zest, grated
- 1 freshly squeezed lemon juice, (the whole zested lemon)
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- strawberries, halved, 250-500g

mix butter, sugar and vanilla paste 45 sek/sp 4
keep mixing and add eggs, one by one with a few seconds in between through lid
keep mixing and add lemon juice and zest through lid and mix for a further minute
add flour, baking powder and bi-carb and mix 30 sec/sp 4
line a baking tray (approx. 32x24cm) with baking paper, and pour in batter; then cover with strawberry halves
bake in preheated oven at 180 degrees C for about 40 mins (until golden and a scewer comes out clean)
let cool, cut into litte pieces of desired size and sprinkle with powdered sugar. store in airtight container in fridge (or on kitchen bench if it's not too hot).
hide it from children and husband.
How to:
Tip
you can use any berries or even cherries! (recommending adding a handful of desiccated coconut and maybe also a shot of rum!)
