Ingredients
Vegetable Curry
- 1 --- onion, medium sized, quartered
- 2 cloves garlic
- 1/2 --- red capsicum, sliced in thin stripes
- 1/4 --- leek, white part, finely sliced
- 1/4 --- zucchini, cut in small chunks/stripes
- 6-7 --- string beans, cut
- 200 grams pumpkin, cut into cubes
- 1 --- spring onion, finely sliced in an angle
- 30 grams Olive Oil or Butter
- 1 can crushed tomatoes
- 2 teaspoons Vege stock paste
- 1/2 can coconut milk
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1-2 teaspoons ground turmeric
- 1 teaspoon dried chili flakes
- 1 teaspoon ground ginger
- 200 grams water
Rice
- 300 grams rice
- 900 grams water

I'm cooking this todayRecipe's preparation
add 900g of water into tmx bowl
insert basket and add 300g of rice
put on lid (MC removed)
put capsicum, leek, zucchini, beans and pumpkin into varoma bowl, put on lid and put varoma on top of tmx
turn tmx 4 seconds/speed 4 (to rinse the water through the rice)
stream rice and vegetables 20 minutes/speed 2/varoma
put rice into Thermoserver and leave vegetables in varoma bowl with lid underneath to catch water
empty leftover water out of tmx bowl
add onion and garlic, chop 3 seconds/speed 6
scrape down sides of bowl and add spices and olive oil, saute 2 minutes/speed 1/varoma
add coconut milk, crushed tomatoes, water, stock paste and vegetables and cook 10 minutes/speed 1/100 degrees/ "Counter-clockwise operation"

You can use any vegetables you like, that's what I had in my fridge.
1 Portion (1 cup cooked rice + 1 generous cup of curry) comes to 395 calories (for those who are counting, I put the curry recipe on MFP)

This was SO delicious. I just used the vegetables in the fridge - celery, spinach, peas, carrots, pumpkin, along with the spice onion mix. I used a whole can of coconut cream with the tomatoes. I'm trying to do low carb, so put the curry on top of fried cauliflower and shredded cabbage in stead of rice, so basically just did the last part of the recipe only, but cooked the pumpkin nad carrot before adding to the spice mix - all in all - FAB! I will certainly be making that again.
This curry is delicious. I was surprised how nice it was as it doesn't have the complex spice combinations of other curries. So easy to make. I skipped steps 1-7 because I had cooked rice earlier in day and just made the sauce and cooked the veges in it
