Ingredients
Curry
- 1 Brown onion, quartered
- 3-5 garlic cloves
- 1 red chilli, optional
- 1/2 - 1 teaspoon cumin ground
- 1 teaspoon ginger ground
- 1 teaspoon turmeric ground
- 1 teaspoon garam masala
- 20 g olive oil
- 190 g red lentils
- 750 g water
- 1 can diced tomatoes
- 1 can chickpeas (drained)
- 1/2 zucchini, cubed
- 1 large carrot, cubed
- 1 - 1 1/2 tablespoons Vege stock paste
- fresh lemon juice, optional

- put onion, garlic and chilli (if using) in bowl and chop 3 sec/sp 7
- scrape down sides
- add spices and olive oil and cook 2 minutes/Varoma/sp 1
- add rest of ingredients except lemon juice and cook 20 mins/"Counter-clockwise operation" /100 degrees/sp 1
- put in thermoserver bowl and let stand covered for 5-10 minutes
- sprinkle with fresh lemon juice (if using) just before serving
- serve on rice
Tip
very tasty dish, can also easily made into a vegetarian sheperd's pie!

This was fabulous. Great flavour. I used heaps of vegetables: cauliflower, capsicum, broccoli, carrot & sweet potato. I would make it again.

Do the lentils need to be soaked before?? I'm new to lentils lol
I made this for the first time last week and really enjoyed it. I added a few extra veggies that needed to be used up and served it with Zoodles.
Great recipe. I cooked it for an extra 10 mins, which really thickened it up. I also steamed cauliflower rice in the varoma at the same time. I also doubled the carrot and zucchini. The whole family enjoyed it.
I added the chilli after reading some comments. It ended up a little too hot for the kids but I liked it. First time I had it with rice which was great to soak up some juice. Second day I had it for lunch and a lot of juice had been soaked over night, so I had it with couscous. I enjoyed both ways. My children had a smaller amount with mashed potato the second time and this helped reduce the heat.
I found the recipe easy and it it made a lot.
Unfortunately not a family favourite so wont make it very often but it is defiantly worth cooking.

Tasty, but a bit mild for my palate. It would be ideal for children. Next time I'll add some chilli powder.
