Ingredients
Pavlova
- 4 egg whites
- 200 g caster sugar
- 1 Tbsp cornflour
- 1 tsp white vinegar
- 1/2 tsp vanilla
Topping
- 300 ml cream
- 1 tsp icing sugar
- strawberries, blueberries, raspberries

I'm cooking this todayRecipe's preparation
1. Pre-heat oven to 150 degree C
2. Place baking paper on a baking tray
3. Ensure the mixing bowl is clean and dry.
4. Insert butterfly and leave MC off.
5. Place egg whites in bowl and whisk for 3 minutes / 37 Degrees/ Speed 3 until soft peaks form. Depending on the temperature of the eggs this may take a little longer
6. Set times for 3 minutes at 40 degrees speed 3, then add the caster sugar 1Tbs at a time over the three minute period.
7. Set timer for 2 minutes at 50 degrees speed 3, add the cornflour, vanilla and white vinegar whisk for 2 minutes.
8. Pile the meringue on the prepared tray
9. Bake in the oven for about 1 hour or until cooked.
10. Once cooked, turn the heat off and allow the pavlova to cool in the oven.
Assembly
Just before serving whip the cream with icing sugar.
Add the cream to the pavlova and top with mixed berries

I have made twice and both times extremely high volume egg white but as soon as vinegar etc hits it liquifies. What is going on.

Truned out perfectly. Im a big fan of the marshmallow over the crunch so I turned it off over 20 minutes. No cracks. No weeping. Perfect
Epic fail. Turned out like a flying saucer no rise what so ever.
Followed instructions to a tea and looked good out of thermo. But was really flat.
Won't be using it again.
Epic fail x 2 😩 the first time I made it to the recipe and egg whites whipped perfectly but when I added the cornflour etc it just went to liquid (I checked the lid as per other comments, but no condensation). I tipped it out and washed and vinegar washed the bowl again.. the second time the egg whites whipped perfectly again but I kept it at 37deg and added the cornflour etc and started going to liquid again so I stopped it 45sec early thinking that it might be ok as it was not complete liquid. I put it in the oven anyway thinking what do I have to lose, but it looks like a pancake 😭 I should have trusted my instincts and used the Kenwood!

Elyse.G: I had the same problem even though I've made heaps of pavs. I think you need to beat the egg whites a lot longer and add the sugar much more slowly over a longer period. I've been using the pavlova recipe by Val74 instead.
