Ingredients

Filling

  • 400 grams cream cheese
  • 75 grams lemon juice
  • 400 gram tin of sweetened condensed milk
  • 1 lemon finely zested (see Tips)
  • 2 teaspoons powdered gelatine
  • 4 tablespoons Boiling water
  • 170 gram tin of passionfruit pulp

Base

  • 200 grams Digestive biscuits
  • 100 grams Butter

Recipe's preparation

    Base
  1. Place biscuits in TM bowl and crush for 5 seconds on Speed 7. Set aside.

  2. Put butter in bowl and melt for 3 1/2 minutes, 50 degrees, Speed 2.

  3. Add back crushed biscuits to the melted butter and mix for 4 seconds on Speed 4

  4. In a 20cm springform tin, place half the biscuit mix onto the base, and press down firmly. The other half of the biscuit mix is used for the sides of the tin, using a spoon will help to press it firmly. Refridgerate for at least 15 minutes.

  5. Filling
  6. Into a clean bowl:

    Place the cream cheese (cubed), the condensed milk, lemon juice and lemon zest and mix for 8 seconds on Speed 6.

  7. Add the passionfruit pulp and mix for 6 seconds on Speed 4 Counter-clockwise operation"Counter-clockwise operation" .

  8. In a small bowl or cup, mix the boiling water and gelatine and stir until well dissolved. Wait for it to cool, then add to TM bowl and mix for 10 seconds on Speed 4 Counter-clockwise operation"Counter-clockwise operation" .

  9. Pour filling into the biscuit-lined tin and refridgerate overnight.

Tip

I recommend using a microplane to zest the lemon as it will produce a very fine zest, otherwise the texture will be too grainy.

The passionfruit can be omitted to make a traditional lemon cheesecake.

Try to use lemons that are just ripe (still with a tinge of green) and fresh.

    Beautiful Cheesecake, that everyone loves. I use granita buiscuits for the base as I prefer them, and I also drizzle extra passionfruit on top and swirl it a little.

    Wonderful recipe! Have made multiple times now. I used fresh passionfruit instead of tinned. Also I melted butter first and then added biscuits straight in after to avoid having to put biscuits aside.

    A very simple, delicious recipe. I used around 80g of fresh passionfruit instead of the canned and I think this made it nicer. Everyone really liked it 😊

    A nice recipe. Ommitted the passionfruit to make a lemon chessecake and it was great. Also used gelatine leaves instead of powder, I used seven but four or five would probably work.

    I just tried to usethe original steamed cheesecake recipe in the basic cookbook- FAIL but steaming it was a massive fail (the Thermomix isn't big enough for steam to move around the 18cm tin suggested) .

    i wondered if I can still use that recipe with eggs instead of gelatin and bake it as In this recipe?

    thoughts anyone?

    Loved it, my husband said it was as good as any store bought cheesecake he's eaten. I added vanilla to the base which gave it a great taste. Also I mixed the gelatin in cold water and heated it slowly and it worked perfectly. But all in all will be making this again.
